Three years ago I bought a flashy Italian espresso machine and a $600 grinder, thinking expensive meant better. Last month my buddy brought over a $200 hand grinder from Portland and we ran the same beans through both back to back. The cheap one produced way sweeter shots with less mess, so now I'm wondering who else has downgraded their gear and gotten better results?

I read a piece from a water testing company that said 95% of coffee flavor is determined by the water, not the beans or the brew method.
