That $40 pH meter from Amazon ruined 10 gallons of hot sauce
I bought this cheap digital pH meter for like $40 thinking it would save me time checking ferments. After about 3 months it started drifting and I didn't notice because I never calibrated it. Ended up bottling 10 gallons of habanero sauce that was way too low acid and I had to toss the whole batch. Anyone else learned the hard way that the cheap meters need weekly calibration or theyll burn you?

Yeah you ever notice how those cheap meters are fine for like a month then they just start lying to you? I had one that said my salsa was at 3.8 pH and I got cocky, didn't double check with strips. Next morning I popped a jar and it was already bubbling.

Switching to the cheap glass pH strips saved me... they're way more reliable than those finicky meters that always need calibrating at the worst times.

Exactly @val_taylor, those cheap meters start failing around the 500th reading.
