Shoutout to the guy who told me to check my starter pH
Spent 3 weeks trying to get my sourdough to rise right. Kept feeding it, kept getting flat loaves. An old baker at the farmer's market finally said test your starter pH. Borrowed a meter from a buddy. Took me 3 days to get it from 5.2 down to 4.1. Had no idea that half a teaspoon of whole wheat would fix it that fast. Anyone else chase a simple fix for way too long?

Feel your pain. Spent a month wondering why my starter was so sluggish before someone told me the same thing. Felt like such an obvious fix once you know it.

You ever wonder how long we'd all sit there cranking a dead battery before figuring it out on our own, @burns.brooke? Glad I'm not the only one who needed a little nudging (and a lot of embarrassment) to sort it out.
