Actually, if you PUSH them down daily, it doesn't always spoil the batch.

Push them down until the bubbles stop, that's when you know it's working. Learned that the hard way with my last batch of kraut.

My last batch turned out fine after I pushed it down every other day. The bubbles slowed way down after about ten days.
