Okay, so my first attempt at fermenting carrots turned into a bubbly mess

I packed some carrots with salt and water in a jar, thinking it would be easy. Two days later, the lid popped off and orange brine sprayed all over my ceiling. It looked like a tiny carrot volcano erupted. Now I always use an airlock or leave the lid loose to avoid repeat incidents.

Yeah, that mess just means it's fermenting like crazy.

That "carrot volcano" sounds like a sign it was working perfectly. I'd take the mess over buying special gear any day.

What kind of salt did you use, and how much per cup of water? Getting that ratio wrong is usually what turns a jar into a geyser.
