My first kraut batch in my Chicago apartment turned into a fizzy mess
Was trying a simple cabbage ferment in a half gallon jar last fall. Forgot to burp it for three days. Came home to a kitchen counter covered in pink brine. Cleaned it up, tasted the kraut, and it was actually fine, just way too fizzy. Anyone else have a ferment explode and still turn out okay?

Forgot to burp a jar of pickled carrots once and the lid blew right off. The weird thing was the carrots got super soft, almost mushy, from all that extra pressure. Made me wonder if the fizz changes the texture more than the taste sometimes.

Ever have a jar explode on someone? My buddy tried making fizzy beets and didn't burp them for a week. When he finally opened it, the lid shot off like a rocket and hit the ceiling. The beets inside were totally broken down, like a weird pink paste. It's like @emmar75 said, that pressure just turns things to mush.
