Someone told me my portfolio had 'too many screenshots' and I was mad at first
I had like 15 projects in my portfolio with full page mockups of every screen, thinking more is better. Then a senior designer I respect said 'show the problem, not the UI, nobody cares about your login screen layouts'. Now I cut it down to 5 projects with just 3-4 key screens each and focus on the thinking behind them. How do you decide what to cut when you have too many case studies to fit in one portfolio?

What's the one project you'd be proudest to explain in an interview?

Oh man, I'd argue it's not about having one perfect project, it's about how well you can talk about fixing a real dumb mistake you made. Being able to laugh at yourself and explain what you learned is way more impressive than a flawless portfolio piece.

Ugh, that "show the problem" advice is brutal but so true. I just cut anything where I can't tell a good story about a real user issue I fixed. If it's just pretty pictures, it gets the axe.
