Overheard a guy at the lumber yard say he uses spray foam in his container walls, not batt insulation

He said batt insulation in a shipping container just traps moisture between the metal and the insulation. Now I'm second guessing my whole build plan since I already bought 300 dollars worth of rockwool. Has anyone else dealt with condensation issues using batts?

Return that rockwool and get some closed cell spray foam instead.

That's a tough spot to be in. @wendysmith I feel for you having to deal with that back and forth. Rockwool is already installed and doing its job in a lot of ways, so ripping it out just feels like a huge waste of money and effort. Spray foam is great for air sealing but it can be a nightmare to work with later if you ever need to run new wiring or fix something in the wall. You did the careful thing by going with Rockwool.
