TIL most people are using way too much water when they pour over

Watched a guy at my local shop in Portland dump his entire kettle in 15 seconds. Flooded the whole filter. I asked the barista about it and she said it's the #1 mistake newbies make. I tried slowing my pour to a thin stream over 2.5 minutes. Night and day difference in taste. Has anyone else noticed cafe customers pouring too fast?

Yeah, that "dumping the whole kettle in 15 seconds" thing is exactly what I was doing for months. I thought more water faster meant more extraction or something, I don't know. Then I watched a YouTube video where a guy did a slow, steady pour over like a minute and a half and I tried it. Huge difference. The coffee was way less bitter and I could actually taste notes in it instead of just "hot brown water." Now I aim for that thin stream and it takes me about two minutes total, and I honestly can't go back to the fast pour.

@kevin_murray88 it's actually closer to 3 minutes total for the best extraction, not 1.5.
