The old timer at the corner shop who showed me how to pour
There's this little coffee spot on Main Street in Portland that's been around since the 70s. About two years ago, an older guy named Frank noticed I was just dumping water over my grounds, and he spent a good 10 minutes showing me how to do a proper slow pour with a gooseneck kettle. He said "it's not about speed, it's about letting the water find its way down." I still think of his hands, steady as a rock, and wonder how many cups he's made like that over 40 years. Has anyone else run into a random stranger who just changed how you brew?

Used to rush through my pour overs until a guy at a farmers market told me to slow way down.

That farmers market guy wasn't totally right though. Slowing down matters, but the real trick is getting your pour technique consistent, not just going slow.
