The day I figured out I was storing my beans wrong for 3 years

I've been into coffee for like 6 years now, grinding fresh, using a scale, the whole thing. But my pour overs always came out kinda flat and sour no matter what I did. Last month I visited a little roastery in Portland called Heart and the barista asked where I kept my beans. I said the cabinet above my stove and she just shook her head. Turns out that spot gets hot from the oven and ruins beans in like a week. I never even thought about it because the cabinet felt cool to the touch. She suggested keeping them in a dark pantry jar away from any heat source. Since I moved them to a cooler spot my morning cups have been way smoother and less bitter. Has anyone else had a storage spot totally mess up their brew and not realize it?

wait over the stove?! dude that's insane. i keep my beans right next to my coffee maker on the counter, never even thought about heat from the oven. i guess it makes sense though, like how you wouldn't keep chocolate near the stove either. man i bet my coffee has been ruined for years and i had no clue. gotta go check my cabinet temps right now.
