Switched my roasts after a cafe owner in Portland set me straight
I used to only buy dark roast beans because I thought lighter ones were too sour. Then I overheard this guy at a shop in Portland explaining how medium roasts actually bring out fruit flavors without the bitterness. I tried a bag from Heart Roasters last week and now I get what he meant. Anyone else find a roast level they used to hate but now love?

Man dark roasts just hide bad beans honestly.

You said it. Hiding bad beans is exactly what dark roasts do a lot of the time. I used to wonder why some cheap grocery store dark roasts tasted so burnt and bitter, and it finally clicked that they were just trying to cover up the low quality. It's like throwing a bunch of hot sauce on a bad piece of meat instead of just getting a good cut. Makes you appreciate a nice light or medium roast where you can actually taste the origin, you know? What's your go-to roast for when you want to really taste the coffee?
