Spent 45 minutes trying to dial in a pour over that should have taken 10
I got a new bag of beans from a local roaster downtown and no matter what I did it came out sour or bitter. Changed grind size, water temp, ratio, all of it. Finally realized my grinder burrs were off alignment by a mile. Fixed that and first cup was perfect. Has anyone else fought with a simple brew for way too long just to find out it was the gear?

You say you "changed grind size, water temp, ratio, all of it" before checking the burrs. What made you finally look at the grinder alignment instead of just blaming the beans?

Did I really spend three weeks thinking I was some kind of coffee genius before realizing I was just drinking channeled sludge? Yeah, that sounds about right. I was basically running a free experiment on how bad espresso can taste when you ignore the obvious, @ericjackson. It took my buddy coming over, taking one look at my shot running like a broken faucet, and just pointing at the grinder. I felt like a real dummy, honestly.

I read somewhere that 90% of bad espresso is just bad grind. You got it sorted, @river183.
