Skip the paper filter and my 8 dollar pour over finally tastes like the cafe down the street
For like a year I could not figure out why my home coffee tasted flat and muddy compared to the cup I get at the place on 5th, even using the same beans. I tried a finer grind, then a coarser one, then colder water, nothing worked. Then a guy at the counter mentioned he rinses his metal mesh filter with hot water before every brew and never uses paper at all, and I figured it was nonsense until I tried it for two weeks straight. Turns out the paper was soaking up all the oils that carry the flavor, and now I'm getting that same full body at home for the price of a bag of beans. Has anyone else ditched paper for mesh, or am I late to this one?
