Just realized my morning coffee was bad because of my water
For about two months, my pour-overs tasted flat and kind of sour, no matter what beans I used. I was blaming my grinder until I visited my sister in Portland and used her filtered tap water with my usual method. The difference was huge, way more flavor and sweetness. I got a simple water filter pitcher for my own tap, and after just one week, my coffee is completely different. It's crazy how one small change can fix everything. Has anyone else had a big improvement just from switching their water source?

So water is 98% of coffee? Guess that explains why my cheap instant stuff just tastes like hot bean water. Maybe I should stop buying the discount tubs. What's your secret for the other 2%?

Whoa, I actually disagree a bit here. Yeah water matters but good beans and a solid grind are way more important than people give them credit for. I've had killer cups from tap water that tasted better than filtered stuff just because the beans were fresh and the grind was on point.
