I was dead set against pour-over coffee until a barista in Portland changed my mind

For years I thought pour-over was just pretentious slow coffee, but this guy at Coava Coffee in Portland spent 10 minutes showing me how the water flow affects extraction. He made me a cup that tasted like blueberries and honey, no sugar needed. Has anyone else had a coffee method they hated turn out to be amazing after one good experience?

Aeropress for me. Hated the fuss until a friend made one that was cleaner and brighter than any French press I'd had. Now it's my daily driver.
