Heard a barista say 'third wave is dead' and it got me thinking
I was standing in line at a small roastery in Cincinnati last Saturday and this younger guy behind the counter told a coworker that third wave coffee is over. It made me remember when we all got excited about single origins and pour overs like it was a big deal. Is the current trend just moving on to something else or are we all just getting older and grumpier?

Pulled up to my local spot in Portland last week and overheard almost the same thing. Some barista talking about how everyone’s sick of the whole ritualistic thing with scales and fancy kettles. I remember when I’d drive 30 minutes just to try a new Ethiopian single origin, now I’m just happy if my drip coffee doesn’t taste like burnt socks. The pour over culture got too try hard honestly, like we were all pretending to be wine snobs or something. Think the new wave is just about good coffee without the attitude, which I’m totally here for.

Saw a dude in Seattle last week with a holographic pour over cone and it made me want to scream... like we're really out here accessorizing our coffee rituals now. Third wave isn't dead, it just turned into a fashion show where you can't tell the difference between a natural process and your grandma's socks. The whole thing got so snobby that even the baristas are tired of pretending every pour over is a religious experience. Honestly, if the trend is to just drink coffee without the 10 minute TED talk about bean origin, I'm fine with that. Better than watching someone weigh out exactly 14.7 grams on a scale like they're defusing a bomb.
