Finally nailed my pour over timing at that little shop in Asheville

I was at High Five Coffee last weekend and the barista saw me rushing my bloom. She quietly said, 'Try counting to 45, not 30.' That extra 15 seconds let the grounds degas way more, and my next cup was so much sweeter and clearer. Has anyone else had a simple tip from a pro totally fix a bad habit?

How did you not get annoyed by the wait? I always rushed it too, thinking more time just meant a slower brew. That extra degassing really does make a huge difference.
