Billing hourly for 5 years, then a flat fee quote from Nashville changed my mind

I used to track every 15 minute block, down to the coffee breaks, and invoice like a lawyer in Manhattan. Then I lost a $40k retainer in Nashville because their CFO said hourly pricing felt like a ticking meter they couldn't trust. Now I'm torn between sticking with detailed timesheets for smaller gigs or going all-in on flat fees. Has anyone else hit this fork in the road and regretted one choice over the other?
