My mentor said to always start layouts in grayscale first, I thought he was crazy

Last year a designer I met at a meetup in Portland told me to build all my website mockups in black, white, and gray before adding any color. I figured that would just make things boring and take twice as long. But I tried it for a landing page project last month and honestly it forced me to focus on spacing and hierarchy way better. Now I do it for every layout and only add color at the very end. Has anyone else found this trick actually works or am I just late to the party?

Think grayscale is a good trick for beginners but people act like it's some secret design hack. Plenty of great layouts get built with color from the start and work fine. It's just one method not a rule.
