My bathroom reno went sideways over a $9 tube of caulk

I was redoing the tile surround in my guest bath in Austin and used the same silicone caulk I always buy, but this batch was older and had separated into this watery mess that bubbled up overnight. Took me an hour with a razor blade to scrape it all out and redo the seams with a fresh tube from the hardware store down the street. Has anyone else had sealant fail just because it sat in the garage through a Texas summer?

Honestly Ive used old caulk plenty of times and it works fine.
