Warning about those 'no rinse' sanitizers for prep surfaces. I thought they were a total scam until my health inspector friend showed me the test strips.

My local health department actually switched to recommending them for small kitchens. The test strips show they work if you use enough product and give it the full contact time listed on the bottle. Most people just spray and wipe too fast.
