Spent 2 hours sharpening knives wrong, then 15 minutes fixing it
Last Tuesday I was doing prep for a 40-cover dinner service. My boning knife kept dragging on tomatoes. I kept hitting the stones at the wrong angle, maybe 8 tries over 2 hours. Then the sous chef walked over, showed me a simple trick with a marker on the edge. Inked the blade, one pass, saw where the metal was grinding off. Adjusted my wrist by 5 degrees, done in 15 minutes. Anyone else have a basic skill that took forever to unlearn?
