Looked up the calorie count of a single truffle shaving, nearly fell over
Last Tuesday I was prepping for a tasting menu and got curious about the exact numbers on shaved black truffle. One thin slice, about 3 grams, comes in at 25 calories but the shocker was the price per gram, nearly 8 bucks at wholesale. That's like plating a small fortune that melts on a hot risotto. Has anyone else ever run the math on an expensive garnish and just had to laugh?
