Heads up about those new 'premium' scallops from the big supplier
Honestly, I had the worst service night of my year last Friday because of them. We got a shipment of their 'dry pack' scallops in for a special, and they were swimming in liquid by the time we opened the bag. I lost about $300 worth because they just steamed in the pan instead of searing. My sous said they smelled a bit off, too, like they'd been treated. We had to 86 the special an hour into service and scramble. Has anyone else had a bad batch from them recently, or know a better source for real dry scallops?

Spot the same thing happening with a lot of "premium" goods now, where the label promises one thing but the product is just the standard stuff. Bought some "artisan" bacon last week that was basically just wet, sweet ham. Feels like suppliers are banking on no one calling out the difference.

Wait, they smelled off too? That's a huge red flag. I can handle some extra liquid, but if the smell is wrong you can't serve that to anyone. Makes you wonder what they're actually putting in the "dry pack" to begin with.

Went to a farmer's market last summer, paid triple for what was labeled "heirloom tomatoes." Got them home, they were mealy and had that weird chlorine smell like grocery store ones. The guy gave me the whole spiel about supporting local farmers, but what I got was basically the same stuff from the back of a Sysco truck.
