Had to choose between a $300 immersion blender or a new stockpot for my soup special.

Went with the blender and it turned my butternut squash soup from good to velvet smooth in under a minute. Anyone else find a specific tool upgrade that just clicked for a dish?

Upgraded to a real carbon steel wok for stir fries. The heat control is a different world. My broccoli actually gets that restaurant char instead of steaming in its own juice.

How long did it take to season yours properly? I made the switch last year and it was a game changer, that high heat sear is everything.

Is it really that big of a deal though? I mean I cook broccoli in a regular non-stick pan and it comes out fine. You just got to crank the heat up and not crowd the pan. What is this "restaurant char" you're talking about? Sounds like you're describing burned edges with extra steps.
