Found out my knife roll has been sitting in the wrong spot for 2 years (my back knows it)
So I've been working the line at this place in Sacramento for about 2 years, and I always kept my knife roll on the low shelf under the pass because that's where the last guy left his. Last Tuesday our sous was watching me bend down to grab it for the fourth time during a rush and just said, "Why do you keep doing that to yourself?" I stood up and realized my knife roll was less than a foot off the floor, so I was crouching maybe 30 times a shift, and that's roughly 15,000 squats a year I never signed up for. Moved it to the top shelf that same night and my lower back stopped yelling at me by Friday. Now I'm wondering what else I picked up just because the last guy did it that way. Anyone else inherit a habit from the person they replaced and not notice it for years?
