Brunch shift at that hotel in Portland broke me a little

Had to plate 40 eggs benedict solo last Saturday because the morning guy called out sick and the hollandaise split on three different orders before 9 AM. My station looked like a war zone with broken yolks and burnt english muffins everywhere. Anybody else feel like brunch service just brings out the worst in a kitchen?

Oh MAN have I been there. That Sunday brunch panic is REAL. First thing, get a backup batch of hollandaise prepped and sitting in a warm water bath BEFORE service hits. When it starts to split, hit it with a splash of cold water and whisk like your life depends on it. For the eggs, I keep a small bowl of ice water next to my poaching station to shock them halfway through if I need to buy time. And for the love of god, have extra muffins pre-toasted and ready to go because nothing slows down a benedict station like burnt bread.
