Warning: I spent 20 years trimming briskets wrong before a rancher set me straight at the farmer's market
He pointed out I was cutting against the grain on the point end and now I get way better bite texture, has anyone else had a similar 'aha' moment on a cut they thought they had down?

Right, so you spent two decades hacking at brisket like a lumberjack and a random guy at a farmer's market just rewired your entire cooking brain. Must be nice to have that kind of free time to get it wrong for so long. I guess I'll just toss my brisket knives in the trash now since apparently I've been a menace at the cutting board my whole adult life.

Ngl that actually hurt to read. @jordangibson I get the sarcasm but honestly cutting against the grain wrong for that long is a legit tragedy, like you've been eating tough brisket your whole life without knowing. That rancher saved your taste buds from a slow, chewy death. Tbh that's the kind of wisdom you can't pay for, just random encounters with people who actually know meat.
