Saw a guy at the local farmers market break down a whole pig with just a boning knife and a hacksaw
I stopped by the Russell Creek market Saturday and this older butcher had no fancy equipment, just a 6 inch flexible boning knife and a rusty hacksaw for the spine. Made me realize I probably overthink my tool setup at home, you know? Has anyone else simplified their kit and gotten better results because of it?

I have to say, that story really hits home for me. I spent years thinking I needed a whole drawer full of specialized knives and gadgets, but then I saw a guy at the Plano market do a whole deer with just a filet knife and a little hand saw. It made me realize I was just making things harder on myself for no good reason. Honestly, simplifying my setup took a lot of the stress out of cooking and actually made me pay more attention to what I was doing. Your mileage may vary, but I bet that butcher's approach teaches you more about the meat than any fancy kit ever could.
