PSA: I used to break down every beef hindquarter with a saw, but now I use a knife for the whole thing after a class in Omaha.
The instructor said 'the saw is for bone, the knife is for muscle' and it cut my time by 30 minutes. Anyone else make a switch like that and stick with it?
