Old ledger book from 1972 showed me how pricing has really shifted
My uncle passed down his old butcher ledger from when he ran a shop in Cleveland. Saw entries for ribeye at 59 cents a pound back in 72. Adjusted for inflation that's still barely 4 bucks today, meanwhile we're charging double that wholesale. It made me realize the craft hasn't changed much, but the margins sure have. Anyone else ever find old records from a family member in the trade?
