Just sharpened my main boning knife for the 1000th time

My apprentice pointed out the steel is now a full inch shorter than when I bought it in '09. Anyone else have a tool that's basically a different shape from years of use?

You said you sharpened your boning knife, but that's not what makes it shorter. Sharpening just removes material from the edge, not the whole blade. The steel getting shorter is from years of grinding down the spine and sides when you reshape it.

Wait, you grind down the spine on purpose? That sounds wild to me. I've only ever touched up the edge on my knives, and they've definitely gotten shorter over time. Are you telling me people are taking metal off the top too? That feels like a whole different level of wear.

Does anyone track the weight of their knife over the years? I'd bet mine lost a full ounce or more just from the edge and spine work alone, which is wild when you think about how much metal actually gets removed. That kind of gradual change really messes with the balance and feel of the tool (in a way you only notice after a decade).
