Just realized buying primals might be smarter than whole animal breakdowns
Some butchers say whole animals teach you more, but I think primals work fine and cut down on work. What do you all think?

Ever try cutting up a whole animal with my shaky hands? I'd probably turn a brisket into mystery stew meat, so primals sound way safer for learning the basics. What knives do you even start with for that?

Grab a boning knife and a chef's knife. That's all you really need to start breaking down primals. Keep it simple.
