My granddad in Texas would take all day on one side of beef. That hands-on work does make you feel connected to the food. No machine can copy that.

@tyler_baker, does that connection come more from the slow pace or the hands-on effort?

I used to disagree but @tyler_baker is right, the hands-on part matters.
