I finally checked out that new butcher shop in Portland last week

Went to Belmont Meats on a Tuesday and honestly I don't get the hype. Their ribeyes were cut way too thin for my taste maybe a quarter inch instead of the standard inch and a half. And the fat cap on their pork shoulders looked like they trimmed it with a lawnmower. Anybody else think these new trendy places focus more on the look than the actual cut?

Thin cuts like that always make me wonder if they're trying to pass off sirloin as ribeye. Did you check if they had any whole primals in the back they could cut to order?

and that's exactly what happened to me last month lol. i went to this new butcher shop and asked for a ribeye and they handed me this sad thin little thing. @lucaslane i swear it looked like it came off a sirloin tip or something. so i asked if they had any whole ribeye primals in the back and the guy just stared at me like i was speaking a different language. i ended up walking out and driving 20 minutes to a place that actually knows how to cut meat properly. its wild how many places try to get away with selling you garbage cuts just cause they slice them thin and call it something fancy.
