Hot take: I hit 10,000 pounds of product processed this month and it threw me off

Honestly, I didn't even track my numbers until last week when I did inventory at my shop in Portland. I broke down 10,200 pounds of beef and pork combined, which is crazy for a one-man operation. It made me realize I need to hire someone soon or I'll burn out. Anyone else ever hit a number that made you rethink your whole setup?

Are you talking pounds of meat or product cost?

Oh man, 10,000 pounds is a beast, but you're talking meat weight, not cost, right? That's a huge physical number for one person, no joke.
