Hit 1,000 pounds of ground beef in a single batch last Tuesday

I've been running my own butcher shop for about 8 years now, and I finally hit a milestone that caught me off guard. Last Tuesday, we ground a full 1,000 pounds of beef from a half-dozen chuck rolls we had in the cooler. It took my guy and me about 4 hours start to finish to get it all through the grinder and packed. I never really thought about the number until I added it up at the end of the day. It made me realize how much our volume has crept up since I started out doing maybe 150 pounds a week. Has anyone else kept track of their biggest single-day grind? I'm curious how that compares to other shops out there.

Did you guys even have time to shake hands with each other after all that grinding? I think I'd need a month off just from looking at that amount of meat.

Why does a 1,000 pound grind sound like a lot but then again not really when you break it down over 4 hours? That's only 250 pounds per hour between two guys, which is pretty steady but not crazy fast. @grant_torres I bet they had time to shake hands and probably grab a beer after that. I think numbers like that sneak up on you when you're not paying attention to the daily grind, no pun intended. My shop does maybe half that on a big day but I can see how volume creeps up over years of orders piling up. It's a good reminder to step back and look at the actual numbers once in a while.
