Brisket from last Sunday looked perfect on the outside but turned out dry inside
I got a whole packer from my supplier 3 weeks ago, trimmed it right, cooked it low and slow for 14 hours at 225, and the bark was beautiful but the flat was like sawdust. This is the third time this month I've had this problem with their choice grade briskets. Anyone else seeing a drop in quality from their distributors lately?

Same problem here with my local supplier. It's like everything's gotten way more expensive but the quality tanked across the board. Reminds me of how everything from grocery store meat to basic lumber is just a little worse these days, feels like companies are cutting corners everywhere lol.

Yo @gavinwood have you tried checking out local butcher shops or farmer's markets instead? lol I was in the same boat with my grocery store meat being all watery and tough, but I found a guy at the farmer's market who sources from a small ranch. The prices aren't much higher and the quality is night and day, especially for ground beef and chicken. Sometimes you gotta dig a little to find the good stuff, but once you do it makes a huge difference.
