My mom told me I was wasting money on pre-cut veggies at the store lol

She said just buy whole ones and chop them yourself, so I started doing that with carrots and onions for soup... saves like $2-$3 a week but man the chopping time adds up. Do you think the convenience is worth the extra cash or am I just being lazy?

Think you're overthinking this honestly. Pre-cut veggies are one of those things where people act like you're burning cash but really it's pocket change we're talking about. Like you said it's maybe $2-$3 a week which is literally a coffee or a snack. If chopping annoys you or you're tired after work just buy the pre-cut stuff and move on with your life. Time is money too and spending 20 minutes hacking at carrots when you could be relaxing or cooking faster is its own cost. Plus if you end up wasting whole veggies because they go bad before you get around to chopping them then you're actually losing money anyway. Don't let people guilt you into being miserable over pennies.

$2-$3 a week adds up to over $100 a year though.
