My $3 carrots turned into $30 soup by accident

Bought a bag of sad looking carrots on sale last Tuesday, then got distracted by a phone call and left them simmering for two extra hours. Ended up with this sweet, jammy carrot soup that beat anything I've made on purpose, so now I'm wondering if anyone else has accidentally stumbled into a better recipe by just walking away?
