Colleague told me my meal prep was boring, so I changed it up

I work in a kitchen in Austin and a line cook said all my lunches looked sad, just chicken and rice every day. He showed me how to make a big batch of black beans for $2.50 and mix them with different veggies each meal. Now I do a big cook on Sunday with beans, roasted veggies, and cheap cuts like pork shoulder. Anyone else get called out for their boring meals and find a fix?

Started doing the same thing after my buddy told me my meal prep looked like a prison tray. Black beans are a game changer, seriously. I throw in some bell peppers and onions I get on sale, then swap out the protein each week. Pork shoulder is great cause you can shred it and it lasts forever. Also try sweet potatoes, they roast up nice and cheap.

Man, the prison tray comment got me too! My sister said my chicken and broccoli looked like cafeteria food so I started adding color. You ever try roasting chickpeas with cumin and chili powder? They get crunchy on the outside and soft inside, super cheap and they don't go bad fast like meat. I also started throwing random frozen veggies into my rice cooker, makes everything look less sad.
