Can we talk about how long it takes for PVA glue to actually cure?

I always thought it was dry after 24 hours, then I read a post from a binder in Germany who said it takes a full 6 days to fully set depending on humidity. I tested it on a scrap stack and sure enough, the spine was still a bit soft at day 2. Has anyone else noticed this or am I just being too impatient?

You said "every 5 minutes" but I'm wondering if you've ever actually WATCHED someone do this. Like do they literally open the oven door and lose all the heat or do they just peek through the glass? Because I have a friend who does the FULL open and close thing every 10 minutes when baking cookies and it drives me NUTS. Is it about not trusting the timer or is it some kind of control thing where they need to SEE progress?
