My go-to has been a basic wheat paste for repairing paperback spines, mixed about one part flour to four parts water. It gets this smooth, almost rubbery feel when it dries that I prefer over the stiffness of PVA glue. I found the mix at my local art store works better than what I tried making from regular baking flour last year. Your starch paste method sounds like it hits that same sweet spot of being strong but still flexible.

Honestly, that rubbery feel from wheat paste doesn't hold up like PVA glue does for me.
