People keep calling slow shows 'boring' before the third episode

I watched 'Severance' with a friend who gave up after two episodes, calling it a slog. The whole point is the slow build (you know, to make the weird office stuff hit harder). By episode 4, the mystery kicks in and you can't stop. If you drop a show before it finds its feet, you're missing the whole payoff. What's a show you almost quit that got amazing later?
