Wrapped my ribs in foil at 3am, big regret by noon
Last Saturday I was tending a 14 pound brisket and two slabs of baby backs on my offset in Tampa, got tired around midnight and decided to foil the ribs early to speed things up. By lunch they came out tasting steamed, all that bark I'd built over 4 hours just dissolved into mush. Has anyone else messed up their timing when they're running on no sleep, or do you have a rule for when foil actually helps instead of hurting?
