Thought offset smokers were overrated until I watched a guy in Memphis run one on a trailer
I always figured offset smokers were just extra work for guys who want to babysit a fire all day. Then last month I stopped at a roadside stand outside Memphis and watched a pitmaster named Dale work a 500 gallon offset for about 11 hours, adjusting the damper maybe twice the whole time. The meat coming off that thing had a bark my drum smoker has never once gotten close to. Now I'm seriously thinking about saving up for one, so what size offset do you all run for backyard cooking?
