The week my offset smoker turned into a rain gauge
Last April in Kansas City, we got that freak spring storm that dumped 8 inches of rain in two days. My usual spot for my offset smoker is under a patio cover, but the wind blew the rain sideways and soaked my firebox. I spent the next 48 hours trying to keep a steady 225 degrees with wood that felt like a wet sponge. Everyone online says you need to wrap your meat, but I'm firm on not wrapping my brisket until the very end, and that week proved me right. The bark still set up, even with the extra fight, and the flavor was deeper than any easy, sunny cook. Has anyone else stuck to a no-wrap method through truly awful weather and been happy with the results?

Used to think wrapping was a must, but last winter my cheap pop-up tent collapsed on my grill during a sleet storm. I mean, fighting that mess for hours with no wrap gave me the best pork shoulder I've ever made. Maybe it's just me but the struggle adds something.
