The Saturday I tried to cook 4 racks of ribs for my kid's graduation and set off every alarm in the house
So my daughter graduated from high school two Saturdays ago and I told my wife I'd handle the BBQ for the party. I fired up the offset at 5am, loaded 4 racks of spare ribs, and figured I had it all under control. Around hour 3 the wind picked up and my temps started bouncing between 225 and 325, which I did not catch for about 45 minutes because I was inside making potato salad. By the time I got back out there the bark was dark, the firebox was running hot, and I had to wrap everything in foil just to slow it down. The smoke rolling off the chimney set off my neighbor's alarm at 11am and he came over in his bathrobe thinking his house was on fire. Ribs actually turned out decent after the wrap, but man that was a rough morning. Anybody got a good tip for keeping steady temps on a windy day with an offset?
