Stopped at a gas station in Amarillo with a full smoker out back
The guy running it was using an old oil drum cut in half over a wood fire, and he had a line of truckers waiting. He told me he started it after his factory job ended, and now he sells about 80 briskets a week from that spot. The smoke smelled amazing, but seeing him check temps with a single oven thermometer was wild. Anyone run into a setup that simple putting out great food?

It's funny how often the best stuff comes from setups that look almost thrown together... like that taco stand near me that uses a couple of beat-up griddles on a folding table. The guy just has a cooler of meat and a stack of tortillas, but there's always a crowd. Makes you wonder how much fancy gear is really necessary.

Oh man, that's so true. But I'd say it's less about the gear being unnecessary and more about the skill being the main thing. The fancy stuff just makes things easier or faster sometimes. That taco guy knows exactly how hot his griddle needs to be and how long to cook the meat, you know? All the gear in the world won't help if you don't know what you're doing.
